Brussels sprouts polarized. Some love it, some hate it. Basically, he's a baby sprout. I've been experimenting with it a bit. I invented this recipe to make Brussels sprouts more palatable to my daughter. Since then, even she likes them.

The recipe also tastes good as a warm winter salad with sheep or goat cheese or fried tofu.

ingredients                                   

  • 600g Fresh Brussels sprouts
  • 75g cranberries
  • 175ml apple juice
  • 75g walnuts
  •  salt, pepper
  • some freshly grated nutmeg
  • 2-4 tablespoons maple syrup
  • 1/2 lemon juice and zest (grated)
  • 1 tablespoon walnut oil

Now it's season for vegetables that taste good when they have gotten a bit of frost, like kale and Brussels sprouts.

Brussels sprouts score points with some valuable ingredients. It provides us with many vitamins and minerals. It can be eaten on the spit more often.

Step by step guide

Step 1

First of all, soak the cranberries in apple juice to make them fluff up nicely. This can also be done the day before.

Step 2

Clean the brussels sprouts, cut off the stalk a little and remove the outer leaves if necessary. Then cut in half.

Step 3

Coarsely chop the walnuts and roast them in a pan without fat until they smell nice and slightly brown. In the picture are pecans. I didn't have walnuts, but they taste just as good.

 

Step 4

Sauté the brussels sprout halves in hot walnut oil. If you like them a little softer, you can blanch them briefly beforehand. Drain the cranberries and catch the juice.

Step 5

Season with salt, pepper and nutmeg and sprinkle with maple syrup. Let it caramelize.

Step 6

Add cranberries with about 80ml of the juice and lemon juice to the Brussels sprouts. Let it fry for a few minutes until the liquid boils down. Finally fold in the nuts and season to taste if necessary.
