Broccoli salad with cranberries, pineapple and peanut dressing

Broccoli - Looks good, tastes good and does us good. A green all-round talent. The recipe has an Asian influence, but you can replace the Asian ingredients with those you have at home. Rice vinegar - White wine vinegar etc..
ingredients
For the salad
- 2 small or 1 large broccoli head
- 2 Mini cucumbers
- 3 tablespoons extra virgin olive oil
- 2 tablespoons rice vinegar
- 2 tablespoons dried cranberries
- 1 small tin or 2-3 fresh slices of pineapple
- Optional:
- 1 pckt. - pine nuts
- 1/2 white onion, finely sliced
- If you like some fresh coriander
For the dressing
- 1/4 cup creamy peanut butter
- 2EL rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar or a little more syrup
- 1 teaspoon sesame oil, roasted if possible. (Olive oil works, too)
- 2cm piece ginger peeled, grated
- Salt
The dressing, cranberries and pineapple stimulate many taste senses and add some glamour to the vegetables! Cranberries deserve a page to themselves, because they are real superfruits. List successful. Cranberry a superfruit
Nutrition
Broccoli aids the immune system with a lot of vitamin C, supposedly protects against diabetes and cancer. Cranberries are not only said to have a beneficial effect on the urinary organs, but also to slow down the aging process. Pineapple contains a lot of vitamins, minerals and trace elements. I could go on with the ingredients, but I think it has become clear: This recipe is healthy - and tasty!
Step by step guide
Step 1
Mix peanut butter, vinegar, soy sauce, sugar (syrup), oil, ginger and 2 tablespoons of water until the liquid is homogeneous. Add some salt to taste.
Step 2
Cut off small heads from the broccoli trunk (If you keep all the vegetable leftovers from cooking during the week in a freezer bag, you can cook a wonderful vegetable broth on the weekend). Cook for about 5 minutes. (You can also leave it raw)
Step 3
Cut the broccoli heads into slices and put them together in a bowl with sliced cucumber. Season with salt and vinegar and mix carefully.
Step 4
Lay the salad on a plate, pour the dressing over it.
Step 5
Arrange cranberries, pineapple pieces, onion rings and pine nuts on top of it. Cut the coriander into strips and sprinkle over the top.
